Ingredients
  

  • 4 salmon fillets 6 ounces each
  • 4 tablespoons unsalted butter softened
  • 2 tablespoons white miso paste
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • 1 cup scallions chopped (white and green parts separated)
  • 1/4 cup fresh parsley chopped
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix together the softened butter, miso paste, soy sauce, and honey until well combined.
  3. Place the salmon fillets on a baking sheet lined with parchment paper. Season with salt and pepper.
  4. Spread the miso butter mixture evenly over the top of each salmon fillet.
  5. Bake the salmon in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  6. While the salmon is baking, heat olive oil in a small skillet over medium heat. Add the white parts of the scallions and sauté for about 2-3 minutes until they become tender.
  7. Remove the skillet from heat and stir in the green parts of the scallions, chopped parsley, and lemon juice. Season with salt and pepper to taste.
  8. Once the salmon is done, remove it from the oven and let it rest for a couple of minutes before serving.
  9. Serve the salmon topped with the sizzled scallion salsa verde.
