Ingredients
  

  • 2 tablespoons olive oil
  • 1 pound ground chicken
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes optional
  • 1 cup cherry tomatoes halved
  • 1/2 cup Kalamata olives pitted and sliced
  • 1/2 cup feta cheese crumbled
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Method
 

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until softened.
  2. Add the minced garlic and cook for an additional 1 minute until fragrant.
  3. Increase the heat to medium-high and add the ground chicken. Cook, breaking it apart with a spatula, until browned and cooked through, about 5-7 minutes.
  4. Stir in the oregano, thyme, red pepper flakes (if using), salt, and pepper. Mix well to combine.
  5. Add the cherry tomatoes and Kalamata olives to the skillet. Cook for another 3-4 minutes until the tomatoes soften.
  6. Remove the skillet from heat and sprinkle the crumbled feta cheese on top.
  7. Garnish with chopped fresh parsley before serving.
