Ingredients
  

For the Chicken
  • 2 pieces Boneless skinless chicken breasts
  • 2 tablespoons Olive oil Can swap with avocado oil
  • 1 teaspoon Garlic powder Fresh garlic can be used
  • 1 teaspoon Dried oregano Thyme is a great substitute
  • 1 teaspoon Paprika Can replace with smoked paprika
  • 1 teaspoon Salt Adjust according to taste
  • 1 teaspoon Black pepper Modify to taste
For the Wrap
  • 4 pieces Whole wheat tortillas Gluten-free or spinach tortillas also work
  • 8 tablespoons Hummus Tzatziki can be a substitute
For the Filling
  • 2 cups Mixed greens Kale or arugula can be substituted
  • 1 cup Cucumber Cut into thin rounds
  • 1 cup Cherry tomatoes Halved
  • 0.5 cup Red onion Thinly sliced
  • 0.5 cup Feta cheese Omit for dairy-free version
  • 2 tablespoons Lemon juice For drizzling

Method
 

Cooking Steps
  1. Preheat your grill or grill pan over medium heat for about 5 minutes.
  2. Drizzle olive oil over both sides of chicken breasts and season with garlic powder, oregano, paprika, salt, and black pepper.
  3. Grill chicken on each side for 6-7 minutes until cooked through and golden-brown.
  4. Remove chicken from heat and let it rest for about 5 minutes.
  5. Wash and slice cucumber, halve cherry tomatoes, and thinly slice red onion.
  6. Slice the grilled chicken into thin strips.
  7. Warm the whole wheat tortillas in a skillet for about 10-15 seconds on each side.
  8. Spread about 2 tablespoons of hummus over each warm tortilla.
  9. Layer mixed greens, cucumber, cherry tomatoes, and red onion on top of the hummus.
  10. Sprinkle crumbled feta cheese over the vegetable layer.
  11. Arrange sliced chicken on top of the feta and veggies.
  12. Drizzle with fresh lemon juice.
  13. Fold in the sides of the tortillas and roll tightly from the bottom.
  14. Slice each wrap in half at an angle and serve.
