For the Stir Fry
  • 1.5 lbs Chicken breasts Tender and juicy, boneless and skinless for the best texture.
  • 3 tbsp Extra virgin olive oil Divided for cooking; add more for sautéing vegetables.
  • Salt & black pepper Adjust to personal preference.
  • 2 medium Zucchini Slice into half-moons.
  • 2 Red bell peppers Dice into chunks.
  • 1 large Red onion Slice into strips.
  • 2 cups Cherry tomatoes Halve before using.
  • 1 cup Kalamata olives Pit and halve.
  • 4 cloves Garlic Minced for full flavor distribution.
  • 0.25 cups Sun-dried tomatoes Chopped.
For the Herbs and Seasoning
  • 2 tsp Dried oregano Adjust based on herb preference.
  • 1 tsp Dried basil Adjust based on herb preference.
  • 0.5 tsp Dried thyme Adjust based on herb preference.
  • 1 Lemon Fresh juice recommended for best taste.
  • 0.5 cups Feta cheese Optional, but highly recommended.
  • 2 tbsp Fresh parsley Optional garnish.

Method
 

Step-by-Step Instructions
  1. Prepare all the fresh ingredients for your Mediterranean Chicken Stir Fry by slicing the chicken, chopping the veggies, and mincing the garlic.
  2. In a large skillet or wok, heat 2 tablespoons of olive oil over medium-high heat and season the chicken pieces with salt and black pepper.
  3. Add the chicken to the skillet and sear for 6-8 minutes until golden brown, then set aside.
  4. In the same skillet, add the remaining tablespoon of olive oil, red onion, and garlic. Sauté for about 2 minutes until onion is translucent.
  5. Add zucchini, red bell peppers, and cherry tomatoes. Stir-fry for 4-5 minutes until softened.
  6. Return the chicken, stir in sun-dried tomatoes, oregano, basil, and thyme. Cook for another 2-3 minutes.
  7. Squeeze lemon juice over the stir fry, fold in olives and feta cheese. Heat for another minute before serving.
  8. Serve hot, garnished with parsley if desired.
