Step-by-Step Instructions
  1. In a large pot, pour in 2 tablespoons of olive oil and heat it over medium heat until it shimmers, about 1-2 minutes.
  2. Add 1 pound of diced chicken breast to the hot oil, cooking for 5–7 minutes until golden and cooked through.
  3. Toss in 2 minced garlic cloves, 1 chopped red onion, 1 diced bell pepper, and 1 diced zucchini. Cook for about 5 minutes until tender.
  4. Stir in 1 cup of orzo pasta and 4 cups of chicken broth. Bring the mixture to a gentle boil.
  5. Once boiling, reduce heat to low and cover the pot. Allow it to simmer for 10–12 minutes or until the orzo is al dente.
  6. Remove the pot from heat, stir in the juice of 1 lemon and fresh herbs. Adjust seasoning with salt and pepper to taste.
