  • 1 pound Boneless Chicken Breast or Thighs cut into 1-inch pieces
  • 2 tablespoons Olive Oil or avocado oil
  • 1 teaspoon Salt
  • 2 teaspoons Italian Seasoning
  • 1 teaspoon Garlic Powder
For the Veggies
  • 1 medium Onion diced
  • 3 cloves Garlic minced
  • 2 cups Kale chopped
  • 1/2 cup Sundried Tomatoes chopped
For the Base
  • 1 cup Vegetable Broth or chicken broth
  • 2 cups Cooked Rice Jasmine or Basmati

Method
 

Step-by-Step Instructions
  1. Cut the chicken into 1-inch pieces, drizzle with olive oil, and season with salt, Italian seasoning, and garlic powder.
  2. Sear the chicken in a preheated skillet for about 5 minutes until golden brown.
  3. Stir the chicken, and continue cooking for 3-5 minutes until cooked through.
  4. Sauté the diced onion in the same skillet until translucent, about 2-3 minutes.
  5. Add garlic and kale; cook until kale is wilted, around 2-3 minutes.
  6. Combine the cooked rice, chicken, and sundried tomatoes; heat through.
  7. Serve warm, garnished with fresh herbs if desired.
