  • 1 pound Ground Turkey or ground chicken/beef
  • 1/2 cup Breadcrumbs/Almond Flour use almond flour for gluten-free
  • 1 medium Onion finely chopped
  • 2 cloves Garlic minced
  • 1 large Egg or flax egg for vegan option
  • 1 teaspoon Kosher Salt adjust to taste
  • 1 teaspoon Black Pepper adjust to taste
For the Bowl
  • 1 cup Couscous/Rice or quinoa/farro
  • 1 medium Cucumber chopped
  • 1/2 cup Kalamata Olives sliced
For the Toppings
  • 1 cup Tzatziki Sauce store-bought or homemade
  • 2 tablespoons Fresh Dill chopped
  • 1 medium Lemon cut into wedges

Method
 

Preparation Steps
  1. Preheat the Oven to 400°F (200°C). Prepare a lined baking sheet.
  2. In a mixing bowl, combine ground turkey, breadcrumbs/almond flour, onion, garlic, egg, salt, and pepper. Mix until well combined.
  3. Roll the mixture into 2-inch meatballs, totaling around 16, and place them on the baking sheet.
  4. Bake the meatballs for 15 minutes, then broil for an additional 2-3 minutes until golden brown.
  5. Cook the rice or couscous according to package instructions, usually 10-12 minutes.
  6. Chop cucumbers and slice kalamata olives while the meatballs and rice/couscous are cooking.
  7. Assemble the bowls by layering rice/couscous, meatballs, cucumbers, and olives.
  8. Drizzle Tzatziki sauce over the assembled bowls and garnish with fresh dill and lemon wedges.
