For the Bowl
  • 1 cup Couscous/Rice Can use quinoa or farro as alternatives
  • 1 cup Cucumbers Diced; bell peppers can be substituted
  • 1/2 cup Kalamata Olives Sliced; green olives can be used
For the Topping
  • 1 cup Tzatziki Sauce Store-bought or homemade
  • 1/4 cup Fresh Dill Can be substituted with parsley
  • 1 whole Lemon Cut into wedges

Method
 

Preparation
  1. Preheat oven to 400°F (200°C).
  2. In a mixing bowl, combine ground turkey, breadcrumbs or almond flour, chopped onions, minced garlic, egg, salt, and pepper.
  3. Roll the mixture into 2-inch balls, creating about 16 meatballs. Place on a lined baking sheet.
  4. Bake meatballs for 15 minutes, then broil for 2-3 minutes.
  5. Prepare rice or couscous according to package instructions.
  6. Chop cucumbers and slice Kalamata olives.
  7. Assemble bowls with rice or couscous, turkey meatballs, cucumbers, and olives.
  8. Drizzle tzatziki sauce over the assembled bowls.
  9. Garnish with fresh dill and lemon wedges.
