Method
 

Instructions
  1. Peel the sweet potatoes and cut them into 1-inch cubes. In a large bowl, toss the sweet potato chunks with olive oil, salt, pepper, and any desired spices. Spread them on a large sheet pan.
  2. In a separate bowl, whisk together the pure maple syrup, a pinch of salt, pepper, and your choice of optional spices. Set aside.
  3. Place the chicken thighs on top of the sweet potatoes. Brush generously with maple glaze, allowing it to drip onto the sweet potatoes.
  4. Preheat the oven to 400°F (200°C) and bake for 35–40 minutes. Flip the chicken halfway and baste with more glaze.
  5. After baking, sprinkle fresh herbs over the top and serve immediately.
