- Peel the sweet potatoes and cut them into 1-inch cubes. In a large bowl, toss the sweet potato chunks with olive oil, salt, pepper, and any desired spices. Spread them on a large sheet pan.
- In a separate bowl, whisk together the pure maple syrup, a pinch of salt, pepper, and your choice of optional spices. Set aside.
- Place the chicken thighs on top of the sweet potatoes. Brush generously with maple glaze, allowing it to drip onto the sweet potatoes.
- Preheat the oven to 400°F (200°C) and bake for 35–40 minutes. Flip the chicken halfway and baste with more glaze.
- After baking, sprinkle fresh herbs over the top and serve immediately.
