Ingredients
  

  • 2 boneless skinless chicken breasts (about 1 pound), cut into bite-sized pieces
  • 1 tablespoon vegetable oil
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 cup sugar snap peas
  • 1 ripe mango peeled and diced
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger minced
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Cooked rice or noodles for serving

Method
 

  1. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the chicken pieces and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add the sliced bell peppers and sugar snap peas. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
  3. Add the minced garlic and ginger to the skillet and stir-fry for an additional 1 minute until fragrant.
  4. In a small bowl, whisk together the soy sauce, honey, cornstarch, and water until smooth. Pour the sauce into the skillet and bring to a simmer.
  5. Return the cooked chicken to the skillet and add the diced mango. Stir well to coat everything in the sauce and cook for another 2-3 minutes until heated through. Drizzle with sesame oil before serving.
  6. Serve the mango chicken stir fry over cooked rice or noodles.
