  • 4 pieces Russet Potatoes diced
  • 2 tablespoons Olive Oil for roasting
  • 1 teaspoon Garlic Powder for seasoning
  • 1 teaspoon Onion Powder for seasoning
  • 1 teaspoon Smoked Paprika for seasoning
  • to taste Salt
  • to taste Pepper
For the Protein
  • 1 pound Ground Beef or Turkey
  • 1 packet Taco Seasoning for flavor
For the Toppings
  • 1 cup Black Beans canned
  • 1 cup Corn fresh or frozen
  • 1 cup Cheddar Cheese shredded
  • 1/2 cup Sour Cream or Greek yogurt
  • 1/4 cup Cilantro chopped
  • 1 piece Tomato diced
  • 1/4 cup Green Onions sliced
  • 1 piece Jalapeños sliced
  • 1 piece Lime cut into wedges

Method
 

Cooking Instructions
  1. Preheat your oven to 425°F (220°C).
  2. Toss the diced potatoes in olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
  3. Spread potatoes on a baking sheet and roast for 25-30 minutes, flipping halfway.
  4. Cook the ground beef in a skillet over medium heat until browned, about 6-8 minutes.
  5. Add taco seasoning to the cooked meat, along with a small amount of water, and simmer for 2-3 minutes.
  6. Warm the black beans and corn in a saucepan over medium heat for about 5 minutes.
  7. Assemble the bowl with crispy potatoes, seasoned beef, beans, corn, and cheese on top.
  8. Add sour cream, cilantro, tomatoes, green onions, and jalapeños as toppings.
  9. Serve lime wedges alongside for added zest.
