Preparation

  5. Stir in the taco seasoning and water to the beef, mixing thoroughly, and allow to simmer until the sauce thickens.
  6. Gently fold in the rinsed black beans and corn to the beef mixture.
  7. Once roasted, divide the potatoes among serving bowls. Top with the beef mixture and sprinkle with shredded cheddar cheese.
