  • 2 large russet potatoes
  • 4 tablespoons vegetable oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 8 ounces shredded cheddar cheese
  • 6 slices cooked bacon crumbled
  • 1/4 cup sour cream
  • 1/4 cup green onions chopped

Method
 

  1. Preheat your oven to 425°F.
  2. Wash and scrub the potatoes, then cut them into thin fries.
  3. In a large bowl, toss the potato fries with vegetable oil, garlic powder, paprika, salt, and pepper until evenly coated.
  4. Spread the fries in a single layer on a baking sheet lined with parchment paper.
  5. Bake for 25-30 minutes, flipping halfway through, until golden brown and crispy.
  6. Remove the fries from the oven and sprinkle the shredded cheddar cheese and crumbled bacon evenly over the top.
  7. Return to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and drizzle with sour cream and sprinkle with chopped green onions before serving.
