Preparation
- Peel and slice banana into chunks, then freeze for 1-2 hours. Cut fresh pineapple and mango into pieces and freeze if necessary.
- In a high-speed blender, combine frozen banana, spinach, ice cubes, pineapple, mango, Greek yogurt, shredded coconut, honey, lime zest, lime juice, and vanilla extract. Blend until creamy.
- Check consistency; add water or more lime juice if too thick, or additional ice cubes if too thin. Blend again as needed.
- Pour smoothie mixture into chilled bowls.
- Top with lime wedges, sliced banana, almonds, granola, and additional coconut.
