Smoothie Base
  • 1 large banana frozen for thickness
  • 2 cups fresh baby spinach can substitute with kale
  • 1 cups ice cubes adjust for desired consistency
  • 1 cup fresh pineapple or frozen if fresh isn't available
  • 1 cup chopped peeled mango or frozen mango
  • 1 cup plain Greek yogurt or dairy-free yogurt
  • 1/4 cup sweetened shredded coconut can use unsweetened to reduce sugar
  • 1 tbsp honey or maple syrup for vegan option
  • 1 tbsp grated lime zest fresh zest preferred
  • 2 tbsp lime juice freshly squeezed
  • 1 tsp vanilla extract optional cream cheese for richness
Toppings
  • 2 wedges lime
  • 1 medium banana sliced
  • 1/4 cup almonds or any favorite nuts
  • 1/2 cup granola use gluten-free if needed
  • 2 tbsp dark chocolate chips optional
  • 2 tbsp additional shredded coconut for extra flair

Preparation
  1. Peel and slice banana into chunks, then freeze for 1-2 hours. Cut fresh pineapple and mango into pieces and freeze if necessary.
  2. In a high-speed blender, combine frozen banana, spinach, ice cubes, pineapple, mango, Greek yogurt, shredded coconut, honey, lime zest, lime juice, and vanilla extract. Blend until creamy.
  3. Check consistency; add water or more lime juice if too thick, or additional ice cubes if too thin. Blend again as needed.
  4. Pour smoothie mixture into chilled bowls.
  5. Top with lime wedges, sliced banana, almonds, granola, and additional coconut.
  6. Serve immediately for best taste and enjoy!
