- Prepare a 9 x 13-inch baking dish by spraying it with cooking spray.
- In a bowl, beat the eggs and prepare lemon curd in a double boiler until thickened.
- Melt butter and marshmallows for the Rice Krispies layer, then add lemon pudding and Rice Krispies, pressing it into the dish.
- Whisk egg whites and other meringue ingredients, heating over water, then beat until stiff peaks form.
- Spread lemon curd over cooled Rice Krispie layer, then dollop and spread meringue on top.
- Brown the meringue using a kitchen torch or under the broiler for about 1 minute.
