For the Lemon Curd
  • 6 tablespoons fresh lemon juice use store-bought if short on time
  • 4 large eggs for richness
  • 8 tablespoons unsalted butter can substitute with vegan butter
  • 6 tablespoons fresh lemon juice bottled is acceptable
  • 2 large freshly grated lemons for zest
  • 1 cup sugar can use coconut sugar
For the Rice Krispies Layer
  • 4 tablespoons unsalted butter substitute with coconut oil for dairy-free
  • 10 ounces marshmallows mini marshmallows can work too
  • 3.4 ounces instant lemon pudding can swap for vanilla pudding
  • 6 cups Rice Krispies cereal gluten-free varieties available
For the Meringue
  • 2 large egg whites room temperature
  • ½ cup granulated sugar use sugar substitute if needed
  • teaspoon cream of tartar omitting may affect texture
  • a pinch fine sea salt can use kosher salt
  • ½ teaspoon pure vanilla extract optional

Method
 

Preparation and Assembly
  1. Prepare a 9 x 13-inch baking dish by spraying it with cooking spray.
  2. In a bowl, beat the eggs and prepare lemon curd in a double boiler until thickened.
  3. Melt butter and marshmallows for the Rice Krispies layer, then add lemon pudding and Rice Krispies, pressing it into the dish.
  4. Whisk egg whites and other meringue ingredients, heating over water, then beat until stiff peaks form.
  5. Spread lemon curd over cooled Rice Krispie layer, then dollop and spread meringue on top.
  6. Brown the meringue using a kitchen torch or under the broiler for about 1 minute.
