  • 1 teaspoon Salt can substitute with sea salt or low-sodium salt
  • 1/2 teaspoon Cracked Black Pepper can substitute with white pepper

Method
 

Preparation
  1. Make the Marinade/Dressing: Whisk together olive oil, fresh lemon juice, water, apple cider vinegar, chopped parsley, dried basil, minced garlic, dried oregano, salt, and cracked black pepper. Reserve half for drizzling later.
  2. Marinate the Chicken: Coat the chicken in the marinade, cover, and let it marinate for at least 15 minutes.
  3. Prepare Salad Ingredients: Wash and chop the romaine lettuce, cucumber, roma tomatoes, and red onion. Place in a large mixing bowl.
  4. Grill the Chicken: Grill the marinated chicken for about 5-7 minutes on each side until golden brown. Let it rest before slicing.
  5. Assemble the Salad: Arrange sliced chicken on top of the veggies and drizzle the reserved dressing. Serve with lemon wedges.

Notes
