  • 1 large Lemon Juice and zest needed
  • 1 teaspoon Smoked Paprika Regular paprika can substitute

For the Roasted Brussels Sprouts
  • 1 pound Brussels Sprouts Fresh or frozen
For Serving
  • 2 cups Quinoa or Rice Cooked
  • 2 tablespoons Fresh Parsley Chopped for garnish

Method
 

Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Trim the Brussels sprouts, slice them in half, and toss with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes.
  3. Combine melted butter, olive oil, minced garlic, lemon juice, lemon zest, smoked paprika, salt, and pepper in a bowl.
  4. Pat the cod fillets dry, brush with the garlic butter mixture, and sear in a skillet over medium-high heat for 2-3 minutes on each side.
  5. Assemble the bowls with quinoa or rice, top with roasted Brussels sprouts and cod.
  6. Garnish with fresh parsley and additional lemon zest if desired.
