- Preheat your oven to 350°F (175°C) and line a 9x9 inch baking pan with foil or parchment paper.
- In a medium bowl, combine flour, oats, salt, and baking soda. In a separate bowl, mix melted butter, brown sugar, and vanilla until smooth. Combine the dry ingredients with wet, saving 3/4 cup of the dough for topping.
- Press the remaining crust mixture into the lined pan and bake for 10 minutes until slightly golden.
- In a bowl, mix sweetened condensed milk, sour cream (or yogurt), egg yolk, lemon juice, lemon zest, and a splash of vanilla until smooth to create the filling.
- Pour the lemon filling over the warm crust and evenly crumble the reserved crust mixture on top.
- Bake for an additional 17-20 minutes, until the topping is lightly golden and the filling is set yet slightly jiggly.
- Cool completely in the pan before using the parchment to lift and slice into squares.
