Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a 9x9 inch baking pan with foil or parchment paper.
  2. In a medium bowl, combine flour, oats, salt, and baking soda. In a separate bowl, mix melted butter, brown sugar, and vanilla until smooth. Combine the dry ingredients with wet, saving 3/4 cup of the dough for topping.
  3. Press the remaining crust mixture into the lined pan and bake for 10 minutes until slightly golden.
  4. In a bowl, mix sweetened condensed milk, sour cream (or yogurt), egg yolk, lemon juice, lemon zest, and a splash of vanilla until smooth to create the filling.
  5. Pour the lemon filling over the warm crust and evenly crumble the reserved crust mixture on top.
  6. Bake for an additional 17-20 minutes, until the topping is lightly golden and the filling is set yet slightly jiggly.
  7. Cool completely in the pan before using the parchment to lift and slice into squares.
