  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 teaspoon turmeric optional, for color

Method
 

  1. In a blender or food processor, combine the cottage cheese, Greek yogurt, honey (or maple syrup), lemon juice, lemon zest, vanilla extract, salt, and turmeric (if using). Blend until smooth and creamy.
  2. Taste the mixture and adjust sweetness or lemon flavor as desired by adding more honey or lemon juice.

  4. Cover and refrigerate for at least 1 hour to allow the flavors to meld and the pudding to chill.
