Preparation Steps
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Wash and cube the medium potatoes into bite-sized pieces.
- In a large bowl, toss the cubed potatoes with olive oil, salt, pepper, and paprika.
- Spread the potato mixture on one side of the prepared baking sheet.
- Roast in the preheated oven for 25 minutes, stirring halfway through.
- Meanwhile, melt the unsalted butter in a medium saucepan, add minced garlic, and cook until fragrant.
- Stir in the fresh lemon juice and adjust seasoning with salt and pepper.
- After 15 minutes of roasting the potatoes, add seasoned salmon fillets to the baking sheet and pour the lemon butter mixture over them.
- Add broccoli florets to the baking sheet and roast for an additional 15-20 minutes until salmon is flaky and broccoli is tender.
- Let it rest for a few minutes, then garnish with freshly chopped parsley and serve.
