Method
 

Preparation Steps
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Wash and cube the medium potatoes into bite-sized pieces.
  3. In a large bowl, toss the cubed potatoes with olive oil, salt, pepper, and paprika.
  4. Spread the potato mixture on one side of the prepared baking sheet.
  5. Roast in the preheated oven for 25 minutes, stirring halfway through.
  6. Meanwhile, melt the unsalted butter in a medium saucepan, add minced garlic, and cook until fragrant.
  7. Stir in the fresh lemon juice and adjust seasoning with salt and pepper.
  8. After 15 minutes of roasting the potatoes, add seasoned salmon fillets to the baking sheet and pour the lemon butter mixture over them.
  9. Add broccoli florets to the baking sheet and roast for an additional 15-20 minutes until salmon is flaky and broccoli is tender.
  10. Let it rest for a few minutes, then garnish with freshly chopped parsley and serve.
