Ingredients
  

  • 4 cups kale stems removed and leaves chopped
  • 1 cup pomegranate seeds
  • 1/2 cup feta cheese crumbled
  • 1/4 cup red onion thinly sliced
  • 1/2 cup walnuts chopped
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste

Method
 

  1. In a large bowl, combine the chopped kale and a pinch of salt. Massage the kale with your hands for about 2-3 minutes until it becomes tender and slightly wilted.
  2. Add the pomegranate seeds, feta cheese, red onion, and walnuts to the bowl with the kale.
  3. In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper until well combined.
  4. Pour the dressing over the salad and toss gently to combine all ingredients evenly.
  5. Let the salad sit for about 10 minutes to allow the flavors to meld before serving.
