Ingredients
  

For the Gnocchi
  • 1 package gnocchi fresh or store-bought
For the Creamy Sauce
  • 4 ounces cream cheese block-style melts best
  • 2 tablespoons olive oil for sautéing
  • 1 medium shallot chopped
  • 2 cloves garlic minced
  • 1 teaspoon red chili flakes to taste
  • 1/4 cup white wine alcohol evaporates during cooking
  • 2 tablespoons tomato paste
  • 1 teaspoon Italian seasoning mix or oregano and basil
  • 2 cups spinach fresh, or substitute with arugula or kale
  • to taste salt
  • to taste pepper

Method
 

Cooking Instructions
  1. In a large skillet, heat olive oil over medium heat until shimmering, about 1-2 minutes.
  2. Add the chopped shallot and sauté for 1-2 minutes until soft. Then, add minced garlic and red chili flakes, cooking for another minute.
  3. Pour in white wine and stir to deglaze the pan, let it simmer for 2-3 minutes.
  4. Cook gnocchi in a separate pot of salted boiling water according to package instructions, about 2-3 minutes.
  5. In the sauté pan, stir in tomato paste and Italian seasoning. Gradually add reserved pasta water, simmering for 3-4 minutes.
  6. Add spinach and stir until wilted down, about 2-3 minutes.
  7. Lower the heat and stir in cream cheese until melted, adding reserved pasta water if necessary.
  8. Gently fold in the cooked gnocchi and flaked smoked salmon, heating through for 1-2 minutes.
  9. Plate immediately and garnish with parsley.
