  • 1 unit lemon zested and juiced

Method
 

Step-by-Step Instructions
  1. Scrub the new potatoes under cold water, then boil in salted water for about 10 minutes until tender. Drain and let cool slightly.
  2. Heat olive oil in a skillet, add diced bacon, and fry for 3-4 minutes until crispy. Remove and drain on paper towels.
  3. Cut the warm potatoes into bite-sized pieces, season with salt, pepper, lemon zest, and juice in a bowl, and toss gently.
  4. In a separate bowl, whisk together sour cream, Dijon mustard, and red chili flakes until smooth.
  5. Pour the dressing over seasoned potatoes and add bacon and herbs. Toss everything gently to coat.
  6. Serve warm or at room temperature, garnished with additional fresh herbs.
