Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with olive oil.
In a large mixing bowl, combine the shredded chicken, cauliflower rice, buffalo sauce, diced jalapeños, coconut milk, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well until all ingredients are evenly coated.
Pour the mixture into the prepared baking dish and spread it out evenly.
Sprinkle the shredded cheddar cheese over the top of the casserole.
Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let it cool for 5 minutes. Garnish with chopped green onions before serving.
