Step-by-Step Instructions for Chipotle Lime Salad Dressing
  1. Juice the fresh limes until you have about 3 tablespoons of juice. Roll each lime on the countertop to maximize juice extraction. Smash and mince garlic cloves, chop chipotle peppers and cilantro.
  2. In a blender, combine Greek yogurt, mayonnaise, honey, lime juice, and olive oil. Blend on high speed for about 30 seconds until smooth and creamy.
  3. Add minced chipotle peppers, adobo sauce, garlic, cumin, salt and black pepper to the blender. Blend on high for another 45-60 seconds until well combined and smooth.
  4. Add chopped cilantro to the blender and pulse for 5-10 seconds to incorporate without completely blending in.
  5. Taste the dressing and adjust seasoning. If too thick, thin out with a bit of water to reach desired consistency.
  6. Transfer the dressing to an airtight container and store in the fridge. Shake well before use. Enjoy your vibrant dressing on salads, tacos, or grain bowls!
