  1. Begin by rinsing the shrimp under cold water in a colander, ensuring they are fully thawed if using frozen shrimp. Pat them dry with paper towels.
  2. In a medium bowl, combine mayonnaise, sriracha, and lime juice. Mix until smooth and adjust sriracha to your taste.
  3. In a large skillet, heat enough oil to cover the bottom over medium-high heat until shimmering.
  4. Carefully add the shrimp to the hot oil in batches and cook each for 2-3 minutes until pink, then flip and cook until golden brown.
  5. Transfer the cooked shrimp to a mixing bowl and pour the sauce over. Toss gently to coat.
  6. Transfer to a serving platter and garnish with chopped green onions. Serve immediately.
