Step‑by‑Step Instructions
  1. Preheat your oven to 170°C (340°F) and prepare two 20 cm (8-inch) baking pans with parchment paper.
  2. Sift together flour, cornstarch, spices, baking powder, baking soda, and salt in a large bowl.
  3. Cream butter, granulated sugar, and dark brown sugar in a stand mixer until light and creamy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Gradually add half of the dry ingredients, then add sour cream, oil, and vanilla; mix until just combined.
  6. Divide batter between prepared pans and bake for 28-30 minutes.
  7. Cool in pans for 5 minutes before transferring to a wire rack.
  8. For frosting, mix butter, powdered sugar, and brown sugar until creamy, then add cream cheese and vanilla bean paste, mixing until fluffy.
  9. Once cake layers are cooled, level tops if needed, stack with frosting in between, and frost the top and sides.
