  • 2 cups Blackberries Fresh or frozen
  • 1/2 cup Granulated Sugar
  • 2 tablespoons Cornstarch
  • 1/4 teaspoon Salt
Dough
  • 1 cup Warm Water Temperature between 110ºF-115ºF
  • 2 tablespoons Active Dry Yeast
  • 1 box Instant Vanilla Pudding Mix
  • 1 cup Milk Non-dairy for vegan option
  • 1/2 cup Unsalted Butter Melted
  • 1/2 cup Greek Yogurt Can be replaced with sour cream
  • 1 large Egg Flax egg for vegan option
  • 4 cups All-Purpose Flour Can use gluten-free blend with binding agents
Cinnamon Filling
  • 1/2 cup Brown Sugar Coconut sugar can be substituted
  • 2 tablespoons Cinnamon Pumpkin pie spice for a twist
Frosting
  • 8 oz Cream Cheese Room temperature
  • 1/4 cup Corn Syrup Honey or agave syrup can be used
  • 2 cups Powdered Sugar No substitutes suggested

Method
 

Preparation Steps
  1. Prepare Blackberry Filling: Cook blackberries, add sugar, cornstarch, and salt, cook until thickened, then cool in the refrigerator.
  2. Make Dough: Activate yeast in warm water, mix remaining ingredients, add yeast mixture, knead until smooth and elastic.
  3. First Rise: Let dough rise in a greased bowl covered with a damp cloth for 1.5 to 2 hours.
  4. Shape Rolls: Roll out dough, add brown sugar and cinnamon, spread blackberry filling, roll tightly and slice.
  5. Second Rise: Arrange rolls in baking dish, cover and let rise for 1 hour, or refrigerate overnight.
  6. Bake Rolls: Preheat oven to 350ºF, bake for 25-30 minutes until golden brown.
  7. Prepare Frosting: Beat cream cheese and butter, add corn syrup and powdered sugar, mix until smooth.
  8. Frost Rolls: Spread frosting over warm rolls and serve with added blackberry filling swirled in.
