Caramelizing Onions
- Thinly slice the yellow onions. In a skillet, heat olive oil and butter, add onions and cook slowly for 30-45 minutes until golden brown.
- Stir in brown sugar and balsamic vinegar, cook for 5 minutes until absorbed and glossy. Season with salt and pepper.
Sautéing Mushrooms
- Add olive oil to the skillet, toss in sliced cremini mushrooms, and sauté over medium heat for 8-10 minutes.
- Add minced garlic and thyme, cook for another minute, then de-glaze with white wine and season again.
Assembling the Sandwiches
- Spread softened butter on one side of each slice of bread. On two slices, spread Dijon mustard.
- Layer Swiss cheese, caramelized onions, sautéed mushrooms, and another slice of cheese, top with remaining slices, buttered side up.
Grilling the Sandwiches
- Grill each sandwich in the skillet over medium heat for 3-4 minutes per side until golden brown and cheese is melted.
- Use a spatula to press down lightly and cover the skillet for faster melting if necessary.
Serving
- Slice sandwiches in half and serve warm, optionally with a fresh side salad or tomato soup.
