Ingredients
  

For the Caramelized Onions
  • 2 large Yellow Onions can substitute with red onions
  • 2 tablespoons Olive Oil or use butter or avocado oil
  • 1 tablespoon Butter can substitute with vegan butter
  • 1 tablespoon Brown Sugar white sugar may substitute
  • 1 tablespoon Balsamic Vinegar red wine vinegar can be an alternative
  • to taste Salt
  • to taste Black Pepper
For the Mushroom Filling
  • 8 ounces Cremini Mushrooms button mushrooms or portobello can be used
  • 2 cloves Garlic can substitute with garlic powder
  • 1 teaspoon Fresh Thyme Leaves or use dried thyme
  • 1/4 cup White Wine or use vegetable broth
For the Sandwich Assembly
  • 4 slices Sourdough Bread any bread can be used
  • 4 slices Swiss Cheese Gruyère or cheddar can be used
  • 2 tablespoons Softened Butter or use oil spray
  • 1 tablespoon Dijon Mustard optional

Method
 

Caramelizing Onions
  1. Thinly slice the yellow onions. In a skillet, heat olive oil and butter, add onions and cook slowly for 30-45 minutes until golden brown.
  2. Stir in brown sugar and balsamic vinegar, cook for 5 minutes until absorbed and glossy. Season with salt and pepper.
Sautéing Mushrooms
  1. Add olive oil to the skillet, toss in sliced cremini mushrooms, and sauté over medium heat for 8-10 minutes.
  2. Add minced garlic and thyme, cook for another minute, then de-glaze with white wine and season again.
Assembling the Sandwiches
  1. Spread softened butter on one side of each slice of bread. On two slices, spread Dijon mustard.
  2. Layer Swiss cheese, caramelized onions, sautéed mushrooms, and another slice of cheese, top with remaining slices, buttered side up.
Grilling the Sandwiches
  1. Grill each sandwich in the skillet over medium heat for 3-4 minutes per side until golden brown and cheese is melted.
  2. Use a spatula to press down lightly and cover the skillet for faster melting if necessary.
Serving
  1. Slice sandwiches in half and serve warm, optionally with a fresh side salad or tomato soup.

Notes
