Step-by-Step Instructions
  1. Heat a medium skillet over medium heat. Add olive oil and sauté minced garlic for 1-2 minutes until fragrant. Add fresh spinach and cook until wilted, about 3-4 minutes. Remove, squeeze out excess moisture, and mix with cream cheese and feta in a bowl.
  2. Preheat your oven to 400°F (200°C). Roll out puff pastry on a floured surface and cut into 3-inch squares. Spoon 1 tablespoon of spinach filling onto each square, fold to form triangles, and seal edges with a fork.
  3. In a small bowl, whisk together the egg with a splash of water for the egg wash. Brush the tops of each pastry with the egg wash.
  4. Line a baking sheet with parchment paper. Place pastries on the sheet and bake for 20-25 minutes until puffed and golden brown.
