  • 1 cup Fresh Arugula or Spinach Optional; other greens like kale can be used.

Step‑By‑Step Instructions
  1. Begin by preheating a non-stick skillet over medium heat for about 2-3 minutes.
  2. Spread 1 tablespoon of unsalted butter on one side of each slice of sourdough bread.
  3. Place one slice of bread butter-side down onto the skillet as the base.
  4. Spread Dijon mustard on the unbuttered side, then layer roast beef and top with cheddar cheese.
  5. Add another slice of bread on top with the buttered side facing up.
  6. Cook the sandwich for about 3-5 minutes until golden brown, then carefully flip and cook the other side.
  7. Check that the cheddar cheese is fully melted before removing from the skillet.
  8. Allow the sandwich to cool slightly, then slice it for serving.
