- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Lay a tortilla flat and layer provolone cheese, deli roast beef, and French fried onions on one half.
- Brush the edge of the tortilla with olive oil and roll tightly from the filled edge.
- Place the rolled tortilla seam-side down on the baking sheet. Repeat with remaining tortillas.
- Brush tops of rolled tortillas with olive oil and bake for 8-10 minutes until golden brown.
- In a saucepan, combine beef consommé, water, Worcestershire sauce, soy sauce, onion powder, and garlic powder. Heat until simmering for 3-4 minutes.
- Once golden brown, let roll ups rest for 2 minutes, then slice and serve with the au jus.
