Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Gather your baking sheet and parchment paper.
  2. Dice the sweet potatoes into bite-sized pieces. Toss with olive oil, smoked paprika, salt, and pepper. Spread on baking sheet and roast for 20 minutes, flipping halfway.
  3. Heat a skillet over medium-high heat, add olive oil, season chicken breasts, and cook for 6–8 minutes until golden brown and cooked through.
  4. In a small bowl, whisk together tahini, lemon juice, and water until smooth. Adjust consistency as needed.
  5. Assemble the rice bowl with brown rice as the base, top with roasted sweet potatoes and sliced chicken, then drizzle with tahini sauce.
  6. Serve warm, optionally garnished with chopped herbs or a squeeze of lemon.
