Ingredients
  

  • 2 large russet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon taco seasoning
  • 1 cup cooked ground beef or turkey
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced green onions
  • 1/4 cup sour cream
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 400°F (200°C). Wash and scrub the potatoes thoroughly, then poke several holes in each potato with a fork. Rub them with olive oil and sprinkle with salt.
  2. Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until they are tender when pierced with a fork.
  3. While the potatoes are baking, heat the cooked ground beef or turkey in a skillet over medium heat. Stir in the taco seasoning and cook for an additional 2-3 minutes until heated through.
  4. Once the potatoes are done, remove them from the oven and let them cool for a few minutes. Cut each potato in half lengthwise and scoop out a small portion of the flesh to create a well.
  5. Fill each potato half with the seasoned meat mixture, then top with diced tomatoes and shredded cheddar cheese. Return the stuffed potatoes to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  6. Remove from the oven and garnish with sliced green onions and a dollop of sour cream before serving.
