  • 8 oz Rotini Pasta or bowtie pasta works too
  • 4 cups Romaine Lettuce chopped well
  • 1 cup Grilled Chicken Breast or substitute with chickpeas
  • 1/2 cup Parmesan Cheese shaved
  • 1 cup Caesar Dressing homemade preferred
  • 1 cup Croutons or crispy bacon bits
  • 2 tbsp Lemon Juice or lime juice as substitute
  • to taste Black Pepper/Salt

Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a rolling boil. Add the rotini pasta and cook according to package directions until al dente, about 8-10 minutes. Once cooked, drain and rinse under cold water.
  2. Wash and chop the romaine into bite-sized pieces. Place in a large mixing bowl.
  3. Add the cooled pasta and sliced grilled chicken to the bowl with the chopped romaine. Sprinkle shaved Parmesan cheese on top.
  4. Drizzle Caesar dressing and lemon juice over the ingredients. Toss everything together until well combined.
  5. Season with black pepper and salt to taste. Top with croutons right before serving.
