  • 12 pieces jumbo pasta shells cook al dente
For the Cheese Filling
  • 15 oz ricotta cheese
  • 1 cup shredded mozzarella cheese plus more for topping
  • 0.5 cup grated Parmesan cheese
  • 1 large egg or substitute with flaxseed egg
  • 5 oz spinach fresh, wilted or frozen, well-drained
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 0.5 tsp pepper
For Assembly
  • 2 cups marinara sauce homemade or store-bought
  • 1 tbsp fresh basil or parsley for garnish

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Cook the jumbo pasta shells in boiling salted water for 8-10 minutes until al dente. Drain and cool.
  3. Mix ricotta cheese, 1 cup shredded mozzarella, Parmesan, egg, spinach, garlic powder, Italian seasoning, salt, and pepper in a bowl until creamy.
  4. Spread 1 cup of marinara sauce on the bottom of a baking dish.
  5. Stuff each shell with about 2 tablespoons of filling and arrange them seam-side up in the dish.
  6. Pour remaining marinara sauce over stuffed shells and sprinkle with remaining mozzarella.
  7. Cover with aluminum foil and bake for 25 minutes.
  8. Uncover and bake for an additional 15 minutes until bubbly and golden.
  9. Let the stuffed shells rest for 5 minutes before serving, garnishing with basil or parsley if desired.
