- Preheat the oven to 375°F (190°C).
- Cook the jumbo pasta shells in boiling salted water for 8-10 minutes until al dente. Drain and cool.
- Mix ricotta cheese, 1 cup shredded mozzarella, Parmesan, egg, spinach, garlic powder, Italian seasoning, salt, and pepper in a bowl until creamy.
- Spread 1 cup of marinara sauce on the bottom of a baking dish.
- Stuff each shell with about 2 tablespoons of filling and arrange them seam-side up in the dish.
- Pour remaining marinara sauce over stuffed shells and sprinkle with remaining mozzarella.
- Cover with aluminum foil and bake for 25 minutes.
- Uncover and bake for an additional 15 minutes until bubbly and golden.
- Let the stuffed shells rest for 5 minutes before serving, garnishing with basil or parsley if desired.
