Ingredients
  

  • 2 pounds boneless skinless chicken thighs
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon olive oil
  • 1 cup crumbled feta cheese
  • 1/2 cup honey
  • 1 teaspoon red pepper flakes adjust to taste
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped fresh parsley for garnish

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, season the chicken thighs with salt, black pepper, garlic powder, and onion powder. Toss to coat evenly.
  3. Heat olive oil in a large oven-safe skillet over medium-high heat. Add the seasoned chicken thighs and sear for about 5 minutes on each side, until golden brown.
  4. In a separate bowl, mix together the honey, red pepper flakes, apple cider vinegar, and lemon juice.
  5. Pour the honey mixture over the seared chicken thighs in the skillet. Sprinkle the crumbled feta cheese on top.
  6. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  7. Remove from the oven and let it rest for 5 minutes. Garnish with chopped parsley before serving.
