In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
Add the honey, egg, and vanilla extract to the butter mixture, and mix until well combined.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Stir in the rolled oats and raisins or chocolate chips if using.
Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake for 10-12 minutes, or until the edges are golden brown.
Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
