Ingredients
  

  • 2 pounds baby carrots peeled and trimmed
  • 1/4 cup unsalted butter melted
  • 1/4 cup honey
  • 4 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh thyme leaves or 1 teaspoon dried thyme
  • 1 tablespoon lemon juice

Method
 

  1. Preheat your oven to 400°F.
  2. In a large mixing bowl, combine the melted butter, honey, minced garlic, salt, black pepper, thyme, and lemon juice.
  3. Add the baby carrots to the bowl and toss until they are evenly coated with the honey garlic mixture.
  4. Spread the carrots in a single layer on a baking sheet lined with parchment paper.
  5. Roast in the preheated oven for 25-30 minutes, or until the carrots are tender and caramelized, stirring halfway through for even cooking.
  6. Remove from the oven and let cool for a few minutes before serving.
