  • 1 pound boneless skinless chicken breasts

  • 1/2 cup BBQ sauce

  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/4 cup chopped green onions for garnish

Method
 

  1. Begin by cooking the white rice according to package instructions. Set aside once done.
  2. In a small bowl, mix together honey, BBQ sauce, garlic powder, onion powder, smoked paprika, salt, and pepper. This will be your marinade and sauce.
  3. Cut the chicken breasts into bite-sized pieces and place them in a large bowl. Pour half of the honey BBQ mixture over the chicken, ensuring all pieces are well-coated. Let it marinate for at least 15 minutes.
  4. Heat olive oil in a large skillet over medium-high heat. Add the marinated chicken and cook for about 6-8 minutes, stirring occasionally, until the chicken is cooked through and no longer pink in the center.
  5. Once the chicken is cooked, pour the remaining honey BBQ sauce over the chicken in the skillet. Stir to combine and let it simmer for an additional 2-3 minutes.
  6. Serve the honey BBQ chicken over a bed of cooked rice and garnish with chopped green onions.
