- Start by cutting fresh mozzarella cheese into 1/2-inch sticks. If the cheese is soft and pliable, pop the sticks into the freezer for about 30 minutes.
- Prepare your breading station with three shallow dishes: one for flour, one for the beaten eggs and milk, and one for the toasted breadcrumb mixture.
- Dredge each mozzarella stick in the flour, then dip in the egg wash, and finally coat with the breadcrumb mixture, pressing well to adhere.
- Arrange the breaded sticks on a tray and freeze for at least 30 minutes to firm up the coating.
- Heat vegetable oil in a deep frying pan to 180°C (356°F).
- Carefully lower a few sticks into the hot oil and fry for 2-3 minutes until golden brown, turning halfway.
- Remove with a slotted spoon and drain on paper towels for about 2 minutes. Serve warm with dipping sauces.
