  • 2 cups Confectioners' Sugar for glazing

Method
 

Dough Instructions
  1. Combine warm water and sugar in a bowl. Sprinkle yeast on top and let it sit for 5 minutes until frothy.
  2. In a stand mixer, mix the yeast mixture with bread flour, all-purpose flour, and salt on low speed for 2-3 minutes until a sticky dough forms.
  3. Transfer the dough into a greased bowl, cover with plastic wrap, and let it rise in a warm place until doubled in size, about 1 hour.
  4. Preheat oven to 425°F and grease a baking pan. Punch down the dough, transfer it to the pan, and let it rise again for 1 hour.
  5. Poke deep dimples in the dough and spread jam over the surface, letting some seep into the dimples.
  6. Bake for 18-22 minutes until golden brown.
  7. Mix confectioners’ sugar with milk to create a glaze while the focaccia bakes.
  8. Remove focaccia from the oven, let cool slightly, then glaze and serve.
