  • 2 cups Spinach fresh or thawed
  • 1 can Artichoke Hearts drained and chopped
  • 8 oz Cream Cheese or Greek yogurt
  • ½ cup Grated Parmesan Cheese or nutritional yeast for vegan option
  • 3 cloves Garlic minced
  • 1 medium Onion diced
  • 1 teaspoon Oregano
  • 1 teaspoon Thyme
  • 1 teaspoon Paprika
  • 2 tablespoons Olive Oil can replace with avocado oil or melted butter
  • Optional Almond or Coconut Flour for crispy topping

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and diced onion, sautéing for 3-4 minutes.
  3. Cut the chicken into bite-sized pieces and add to the skillet. Cook for 5-7 minutes until golden brown.
  4. Add spinach and artichokes to the skillet and cook for another 2-3 minutes until the spinach wilts.
  5. In a separate bowl, combine cream cheese, Parmesan, oregano, and thyme. Mix until smooth.
  6. Pour the creamy mixture over the chicken and vegetables in the skillet, stirring to combine.
  7. Transfer the mixture to a greased baking dish. Sprinkle almond or coconut flour on top if desired.
  8. Bake in the preheated oven for 30-40 minutes until bubbly and golden brown.
  9. Let cool for a few minutes before serving.
