Ingredients
  

  • 1 cup plain Greek yogurt
  • 1/2 cup creamy peanut butter
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 cup mini chocolate chips optional
  • 1/4 cup crushed nuts optional

Method
 

  1. In a medium bowl, combine the Greek yogurt, peanut butter, honey (or maple syrup), and vanilla extract. Mix until smooth and well combined.
  2. If desired, fold in the mini chocolate chips and crushed nuts for added texture and flavor.
  3. Line a baking sheet with parchment paper. Using a spoon or a small cookie scoop, drop spoonfuls of the mixture onto the prepared baking sheet, spacing them about 1 inch apart.
  4. Place the baking sheet in the freezer and freeze for at least 2 hours, or until the bites are firm.
  5. Once frozen, transfer the bites to an airtight container or zip-top bag and store them in the freezer for up to 2 months.
