Ingredients
  

  • 2 cups cottage cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup chopped spinach fresh or frozen
  • 1 cup diced bell peppers any color
  • 1 cup diced zucchini
  • 1/2 cup chopped onion
  • 1/2 cup grated Parmesan cheese
  • 3 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes optional
  • 1 tablespoon olive oil
  • 1/4 cup chopped fresh parsley for garnish

Method
 

  1. Preheat your oven to 375°F.
  2. Grease a 9x13-inch baking dish with olive oil.
  3. In a large mixing bowl, combine the cottage cheese, mozzarella cheese, spinach, bell peppers, zucchini, onion, and Parmesan cheese.
  4. In a separate bowl, whisk together the eggs, garlic powder, onion powder, salt, black pepper, and red pepper flakes.
  5. Pour the egg mixture into the cheese and veggie mixture, stirring until well combined.
  6. Transfer the mixture to the prepared baking dish, spreading it evenly.
  7. Bake in the preheated oven for 30-35 minutes, or until the top is golden and the center is set.
  8. Let it cool for 5-10 minutes before slicing.
  9. Garnish with fresh parsley before serving.
