Ingredients
  

For the Poppers
  • 1 lb Ground Chicken can substitute with turkey or beef
  • 1 medium Zucchini squeeze out excess moisture
  • 1 cup Low-Fat Mozzarella Cheese or use nutritional yeast for dairy-free
  • 1/2 cup Parmesan Cheese can use dairy-free version
  • 1/2 cup Almond Flour or use traditional breadcrumbs
  • 1 large Egg for binding the mixture
  • 2 cloves Garlic minced
  • 1 medium Onion chopped
  • 1 tbsp Italian Seasoning
  • 1 tsp Salt
  • 1 tsp Pepper

Method
 

Directions
  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or grease lightly.
  2. In a large mixing bowl, combine ground chicken with grated zucchini, ensuring excess moisture is squeezed out. Add mozzarella, Parmesan, and egg, then incorporate garlic, onion, almond flour, Italian seasoning, salt and pepper. Mix thoroughly.
  3. Shape the mixture into popper-sized balls or patties and place them on the baking sheet, leaving space between each.
  4. Lightly spray the tops of the poppers with olive oil.
  5. Bake for 20-25 minutes until golden brown and the internal temperature reaches 165°F (75°C). Switch on the broiler for the last minute for extra crispness if desired.
  6. Allow cooling slightly before serving with your favorite dipping sauce.

Notes
