Preparation

  2. Take your chicken breast or thighs and cut them into uniform 1-inch cubes.
  3. Place the diced chicken in a large bowl or resealable bag. Add the prepared dry rub and toss until thoroughly coated.
  4. In a large skillet, heat about two tablespoons of olive oil over medium-high heat until shimmering—around 2-3 minutes.
  5. Carefully add the coated chicken pieces to the skillet in a single layer. Cook for about 5-8 minutes, turning occasionally until golden brown.
  6. Once fully cooked, transfer the chicken bites onto a serving platter.
