Ingredients
  

  • 8 ounces whole wheat pasta
  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 teaspoon red pepper flakes optional
  • 1 cup low-sodium chicken broth
  • 1 cup fresh spinach chopped
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Method
 

  1. Cook the whole wheat pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the chicken pieces and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes.
  3. Add the minced garlic and red pepper flakes to the skillet, cooking for an additional 1-2 minutes until fragrant.
  4. Pour in the chicken broth and bring to a simmer. Let it cook for about 3-4 minutes to reduce slightly.
  5. Stir in the chopped spinach and cooked pasta. Mix well, adding reserved pasta water as needed to reach desired consistency.
  6. Remove from heat and stir in the grated Parmesan cheese until melted and creamy.
  7. Serve immediately, garnished with fresh parsley.
