Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the chicken breasts with soy sauce, olive oil, honey, minced garlic, ground ginger, paprika, salt, and pepper. Mix until well coated and let marinate for 10 to 15 minutes.
  3. Spread red and yellow bell peppers, slices of red onion, and drained pineapple across a large sheet pan.
  4. Add the marinated chicken directly to the sheet pan over the vegetables and pour the remaining marinade over everything.
  5. Bake in the preheated oven for 25 to 30 minutes, stirring halfway through until the chicken reaches an internal temperature of 165°F (74°C).
  6. Remove from the oven and let rest for a few minutes before garnishing with cilantro.
  7. Serve over rice or quinoa.
