- Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
- In a medium mixing bowl, cream together softened butter, brown sugar, and granulated sugar until smooth and creamy, about 2-3 minutes.
- Add in one large egg and vanilla extract, mixing on low speed until fully incorporated, about 1-2 minutes.
- In a separate bowl, sift together flour, corn starch, baking soda, and salt. Gradually add to wet ingredients, stirring until just combined.
- Fold in the semi-sweet chocolate chips and Halloween sprinkles into the dough.
- Scoop about ¼ cup of dough, flatten it, and place a Halloween Oreo in the center. Encapsulate the Oreo with dough and place on the baking sheet.
- Bake for about 10 minutes, keeping an eye on them to ensure they are slightly underbaked in the middle.
- Add more chocolate chips on top of warm cookies. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
