Step-by-Step Instructions
  1. In a mixing bowl, whisk together fresh ginger, minced garlic, both types of soy sauce, creamy coconut milk, brown sugar, fresh lime juice, salt, and pepper until well combined.
  2. Add bite-sized chunks of chicken to the marinade and coat thoroughly. Cover and refrigerate for at least 30 minutes.
  3. Soak wooden skewers in water while the chicken marinates. Then, thread the marinated chicken pieces onto the skewers.
  4. Preheat your grill to medium-high (200°C / 400°F) and lightly oil the grates.
  5. Place skewers on the grill and cook for 4–5 minutes on each side, ensuring the chicken reaches an internal temperature of 74°C (165°F).
  6. Remove from heat, let rest for a minute, and drizzle with fresh lime juice before serving.
